Tikka Masala Pasta

India meets Italy — a creamy tikka-spiced pasta that's weeknight comfort in under 30 minutes.

INGREDIENTS

  1.  200g pasta (penne or rigatoni)
  2.  2 tsp Apical Tikka Masala
  3. 1 cup tomato passata
  4. 1/2 cup heavy cream or coconut cream
  5. 1 tbsp butter + 1 tsp oil
  6. 1 small onion, diced
  7. Salt and fresh basil to finish

METHOD

  1. Cook pasta in salted boiling water per packet instructions. Reserve 1/2 cup pasta water.
  2. Meanwhile, saute onion in butter and oil over medium heat for 5–6 min until soft.
  3. Stir in Apical Tikka Masala and cook 1 min until fragrant.
  4. Add passata, stir well, and simmer 8 min. Pour in cream and cook 3 more min.
  5. Toss in drained pasta, adding a splash of pasta water to loosen the sauce to your liking.
  6. Season with salt, top with torn basil, and serve immediately.
