Peri Peri Corn Ribs
Curved, charred corn ribs with fiery peri peri spice — the party snack everyone will Instagram.

INGREDIENTS
- 3 corn cobs
- 2 tsp Apical Peri Peri Masala

3 tbsp olive oil

1 tsp salt

Juice of 1/2 lime

Sour cream or yogurt dip to serve
METHOD
- Stand each corn cob upright and carefully cut into quarters lengthwise to make "ribs".
- Preheat oven to 220°C (or set up a grill/air fryer).
- Mix olive oil, Apical Peri Peri Masala, and salt. Toss the corn ribs to coat well.
- Arrange on a baking tray and roast for 22–25 min until edges char and the ribs curl.
- Squeeze lime over the top the moment they come out of the oven.
- Serve with a cool sour cream dip and extra peri peri on the side.
