Peri Peri Corn Ribs

Curved, charred corn ribs with fiery peri peri spice — the party snack everyone will Instagram.

INGREDIENTS

  1.  3 corn cobs
  2.  2 tsp Apical Peri Peri Masala
  3. 3 tbsp olive oil
  4. 1 tsp salt
  5. Juice of 1/2 lime
  6. Sour cream or yogurt dip to serve

METHOD

  1. Stand each corn cob upright and carefully cut into quarters lengthwise to make "ribs".
  2. Preheat oven to 220°C (or set up a grill/air fryer).
  3. Mix olive oil, Apical Peri Peri Masala, and salt. Toss the corn ribs to coat well.
  4. Arrange on a baking tray and roast for 22–25 min until edges char and the ribs curl.
  5. Squeeze lime over the top the moment they come out of the oven.
  6. Serve with a cool sour cream dip and extra peri peri on the side.
